Puer tea is a type of fermented tea. Fermented teas are also called "hei cha" or dark tea. Fermentation refers to the breakdown of substances by microorganisms.  The base tea of pu'erh teas is processed as green tea before entering the final stage of the processing, which is fermentation. The fermentation stage determines whether the tea will be Sheng (Raw) or Shu (Ripe).
